
Recipe: Rosewater Almond Bliss Balls

As we transition into Virgo season, a time ruled by the element of earth, it’s essential to nurture ourselves with foods that balance the fiery and intense energy of Pitta dosha, which can be heightened during this time of year. These Rosewater and Almond Bliss Balls are a perfect, cooling treat to soothe and pacify Pitta. The floral notes of rosewater and rose petals, combined with the grounding energy of almonds, create a sweet, calming snack that helps balance both the body and mind. Enjoy these bliss balls as a nourishing bite during Virgo season’s focus on health and harmony.
Ingredients:
- 1 cup almonds (you can also use a mix of almonds and cashews)
- 1 cup pitted Medjool dates (about 12-14 dates)
- 2 tablespoons desiccated coconut + extra for decoration
- 1.5 tablespoon rosewater (adjust to taste)
- 1/2 teaspoon vanilla extract
- A pinch of salt
- Dried rose petals for decoration
Instructions:
- Prepare the Almonds: Start by roasting the almonds in a dry skillet over low heat for a few minutes until they become fragrant and slightly toasted. Allow them to cool.
- Process the Nuts: Place the roasted almonds in a food processor and pulse until they are finely ground but not a paste. You want a crumbly texture with small almond pieces.
- Add Dates and Flavorings: Add the pitted Medjool dates, desiccated coconut, rosewater, vanilla extract, and a pinch of salt to the food processor with the ground almonds. Process the mixture until it comes together into a sticky dough. If it's too dry, you can add a little more rosewater.
- Shape into Balls: Remove the mixture from the food processor and, with your hands slightly dampened with water, roll it into bite-sized balls. You can make them as small or as large as you like.
- Decorate with Rose Petals and more coconut: If you have dried rose petals, gently press them onto the surface of the bliss balls for an extra touch of beauty and flavour.
- Chill and Serve: Place the rosewater and almond bliss balls on a tray or plate lined with parchment paper and refrigerate them for at least 30 minutes to firm up. Once chilled, they are ready to serve.
- Enjoy: These bliss balls are a delightful sweet snack with the subtle, fragrant flavor of rosewater. They make for a lovely treat with a cup of tea or as a healthy dessert option.
