Lung-Healing Cauliflower Soup with Coconut & Curry (Vegan & Anti-Inflammatory)

🍲 Ingredients for 4 People

 

  • 1 cauliflower (cut into smaller pieces)
  • 1 big onion (coarsely chopped)
  • 0,5 l vegetable stock
  • 2,5 dl coconut milk (from a can, not the drinkable option)
  • 1 el sesame oil or coconut oil
  • 2 cloves of garlic, finely chopped
  • 1/2 tbs green curry paste
  • 1 cm fresh ginger, peeled and chopped into small pieces
  • 1/2 ts chili powder
  • 1 ts curcuma (also known as turmeric)
  • 1 ts grounded coriander
  • 1 ts grounded cumin
  • 1 handful of fresh coriander for garnish

 

👩‍🍳 Step-by-Step Preparation

 

Prep: 10 minutes
Total:
40 minutes

1. Heat the oil, add the grounded spices & ginger and mix well. Add the onion until it's glazed and then add garlic and curry paste. Keep stirring to release the aromas.

2. Add the cauliflower parts to the spices, mix well. Add vegetable stock and bring to boil. Turn down the heat and leave the soup to simmer for 20 minutes.

3. Take out a big portion of cauliflower and set aside.

4. Add the coconut milk to the soup and blend with an immersion blender. Be careful not to burn yourself! Then return to boil and add some salt and pepper if desired.

5. Make sure the soup is nice and hot and then turn down the heat down and leave for just a little while before turning it off. Leave the soup for a few minutes before serving, this will improve the taste.

6. Serve the soup in deep plates or bowls and garnish with some of the cauliflower you have set aside and top it of with some fresh coriander.
